Fridge Pickles

I make a lot of homemade pickles and after we eat them, there’s always leftover pickle juice. Waste not want not, I always say. So we save all of our leftover pickle juice to make what’s known as fridge pickles. Basically just add any vegetable or fruit to your pickle juice and put in the fridge, you will have instant pickles at your fingertips. I love garlic scapes and in addition to making garlic scape butter, I also make pickles. Garlic scapes are also great fresh in salads, stir frys or soups. I also save kale stems to add to pickle juice or even watermelon rinds! You can pickle just about anything really. Try googling your favorite veggies and the words pickle recipe - you might be surprised at what comes up!
