Can you do the Can Can?

Rhubarb is a wonderful perennial that produces more and more each year. Each plant often has a story to tell about where or who it came from. Many people inherit well established rhubarb, yet have no idea what to do with it aside from rhubarb crumble or rhubarb cake. I like to cook it up with a bit of water and honey and serve with french toast or pancakes. One of my favourite ways to put away this super food is to can it. You can later add it to fruit salads, bake cakes or make syrups and spreads. Its also great to just pour over yoghurt or ice cream. Remember, the leaves are poisonous, so cut off leaves a good section from the stem.

“Rhubarb is now considered to be a superfood. It is very low in calories, which makes it very appealing to those who are looking for healthy food for weight loss. It also has a high level of calcium that supports bone health. Plus, it is rich in fiber, helping to reduce blood cholesterol levels.” - optimalhealthsolutions.ca/rhubarb-a-wonder-food-for-weight-loss-and-more/
